Background:
Ethiopia is the birthplace of coffee, celebrated for its extraordinary diversity of flavours, from delicate florals to vibrant citrus and ripe fruit. This coffee comes from Worka Chelichele washing station, in a region where geography, climate and flavour traditions matter just as much as the boundaries drawn on a map.
Although the station officially sits in Gedeb Woreda, its coffees share the distinctive character of neighbouring Yirgacheffe, one of Ethiopia’s most renowned coffee-growing regions. Here, smallholder farmers cultivate coffee using traditional methods, often intercropping their plants with food crops to make the most of their land. Farms are typically worked by hand, with little or no use of synthetic fertilisers or pesticides.
This lot benefits from a carefully controlled anaerobic natural process, developed through experiments by Tracon Coffee, our in-country partner, who have been exploring anaerobic fermentation at washing stations in Yirgacheffe since 2015.
The process begins with selectively handpicked, fully ripe coffee cherries. After careful inspection, the cherries are packed into sealed, oxygen-free GrainPro bags and left to ferment for 18–24 hours. Without oxygen, a different balance of microorganisms becomes active, influencing the flavours that develop inside the fruit.
Once fermentation is complete, the whole cherries are spread across raised drying beds in the sunshine. They are turned regularly to ensure even drying, a process that takes around two to three weeks.
The result is a natural coffee with the potential for remarkable fruit intensity and complexity, complemented by bright citrus and delicate floral notes. Behind every cup lies a combination of Ethiopia’s rich coffee genetics, generations of farming knowledge and thoughtful experimentation in processing.
By working closely with producers and supporting improvements in harvesting and cherry handling, Worka Chelichele helps bring out the best in each harvest, creating distinctive coffees that reward curiosity and celebrate Ethiopia’s extraordinary coffee heritage.
