Background:  

These beans come from Tarrazú, one of Costa Rica’s most celebrated coffee-growing regions. High in the mountains south of San José, the landscape is a perfect recipe for exceptional coffee: rich volcanic soils, lush vegetation, cool temperatures and distinct rainy and dry seasons.

Our coffee comes from Finca San Cristóbal Norte, also known as El Pino, the Navarro family’s first farm, established in 1945. The Navarro family has more than a century of experience producing coffee, with knowledge and passion passed down through generations. Today, the farm and micromill are run by members of the family, who are known locally for their careful cultivation and high standards.

The farm sits between 1,600 and 1,800 metres above sea level, where cooler temperatures allow the coffee cherries to ripen slowly and develop greater depth and complexity. This lot combines the varieties Caturra, Catuaí and Marsellesa.

For this coffee, the cherries were processed using the natural method at Coffee Nace S.A. Micromill. After harvesting, only ripe cherries are selected before they are laid out to dry, keeping the fruit around the coffee bean throughout the process. Here, the cherries take roughly 15 days to dry, concentrating the fruit character and creating a naturally sweet, expressive cup.
