Background:
For Wilmer Cubillos, coffee farming is a passion built on curiosity, dedication and a desire to produce something special. A first-generation coffee farmer, Wilmer bought Finca El Rosal in 2006 and has since devoted himself to exploring the potential of specialty coffee.
Located in El Rosario, Acevedo, in Colombia’s Huila region, the 10.5-hectare farm sits at 1,650 metres above sea level. Here, warm days and cool nights provide ideal conditions for coffee cherries to develop slowly, building sweetness and complexity. Wilmer lives on the farm with his wife and youngest son, overseeing every stage of production with a clear ambition: to create distinctive coffees that stand out in the cup and receive the recognition they deserve.
His particular passion is Tabi, a variety developed by Colombia’s coffee research centre, CENICAFE, through a cross between Typica, Bourbon and Timor. The aim was to combine the excellent cup quality of traditional varieties with the rust resistance of Timor. Well suited to higher elevations, Tabi has plenty to offer in both the field and the cup. Its name comes from the language of the indigenous Guambiano people, meaning “good” – an appropriate name for a variety Wilmer is determined to showcase internationally.
That determination is reflected in his approach to processing. Cherries are first fermented in sacks for 18 hours before being pulped, followed by a further six hours of fermentation in tanks and a thorough wash. The parchment is then carefully dried, with frequent raking to ensure consistency. Wilmer has also invested in improved equipment and fermentation tanks to minimise the risk of unwanted flavours, with further improvements to his drying facilities planned.
Every harvest is an opportunity to refine his craft. We think this Tabi is a lovely example of what dedication, thoughtful processing and a promising variety can achieve.
