Background:
This coffee comes from Java Frinsa Estate in West Java, Indonesia, a producer known for precision, experimentation, and full control of their processing from farm to export. The estate is run by Wildan Mustofa and Atieq Mustikaningtyas, who began their coffee journey in 2010 with a strong focus on quality-driven, fully washed coffees—at a time when many Indonesian producers were still relying on traditional wet-hulled methods.
This lot is made up of several locally grown varieties including Andungsar & Sigarar Utang, all cultivated across Frinsa’s carefully managed plots at high elevations in West Java.
The process is a Lactobacillus cerevisiae extended fermentation honey method, designed to build complexity and clarity in the cup. After harvest, cherries are carefully sorted and floaters are removed. They are then fermented in tanks with Lactobacillus cultures for 2–3 days. Following fermentation, the coffee is pulped but left with its sticky mucilage intact, then gently dried on covered tarpaulins for 2–3 days.
A final drying stage on raised patios lasts 7–10 days, allowing the flavours to stabilize and concentrate.
The result is a cup that is sweet and mild, with nectarine brightness and deeper notes of blackberry and blackcurrant. It has a structured, concentrated feel, layered with herbal tones, green pepper, milk chocolate, and a distinctive jelly-like sweetness that sets it apart.
Frinsa Estate itself is made up of multiple sites across West Java, including Weninggalih, Mekarwangi, Tilu Mountain, Pengalengan, Malabar Mountain, and partnerships with smallholders in Garut. Across these areas, the team manages everything from selective picking to separation by variety and harvest date, ensuring traceability and consistency.
