Background:  

Grown high in the mountains of southern Huila, this coffee comes from the small farm Bella Vista, owned and managed by producer Ananias Silvestre Bonilla. The farm lies in the Las Palmeras area of Guadalupe at an altitude of 1,938 meters above sea level, where cool nights and sunny days create excellent conditions for slow cherry maturation and complex flavour development.

Bella Vista is a compact 1.35-hectare farm planted with approximately 8,000 coffee trees, primarily the Caturra and Bourbon Rosado varieties. Like many producers in this part of Colombia, Ananias works on a small scale but with meticulous attention to quality. The farm’s main harvest takes place in May and June, followed by a smaller mitaca harvest in October and November. During these periods, Ananias works alongside one permanent employee and additional seasonal pickers to carefully select ripe cherries.

Processing begins immediately after harvest. The cherries are first floated in water tanks, allowing less dense or defective fruit to be removed. After depulping, the coffee undergoes controlled fermentation in lined tanks, helping to develop clarity and structure in the cup. The beans are then slowly dried in covered plastic dryers, protecting them from rain while maintaining consistent airflow.

Ananias is a member of Coocentral, the largest cooperative in Central Huila. Through technical training, quality programs, and long-term community investments, the cooperative supports thousands of smallholder producers in the region. Importantly, farmers receive 100% of any premium paid above market price, ensuring that higher quality directly rewards the people growing the coffee.
